Greetings!
I had the chance to go out for lunch yesterday in a local Vietnamese restaurant up here in MN. I always order the Pho- it is a beef or chicken broth soup with rice noodles, thin sliced meat, a skinless sausage, lemon grass, green onions, bean sprouts, and a small touch of mint- I always add some Siracha for a kick. It is created by a local Viet grandmother whose cooking is out of this world! I hope some of you fellows get to try some of the authentic cuisine no matter where you live. The fresh taste of the simple ingredients will make you long for more! I feel very fortunate having a very large Vietnamese and Hmong community up around the Minneapolis area, I couldn't ask for better neighbors...

I've had Pho here in Vancouver, WA at a place called Saigon. It was really good, but unfortunately across town and I can't get there regularly...

An excellent subject! A bowl of Pho Ga - This is more Southern style pho - The northern style is much simpler - Cheers!

Lots of Viet restaurants around here, which is just fine with me. That and Thai are a great way to sample Oriental cuisine without having to resort to Chinese food, which- whether Americanized or not- I find rather boring.

That's the stuff! They say 'variety is the spice of life', well, Pho with Siracha will certainly stand on its own merits! BTW, LOVE Thai spiced food as well. Food that grabs you by the lapels and screams in your face is always interesting... Cheers! ---Toussant

There's a great "Orental" market (they have tons of Indian, Thai, and foods of other nationalities) on the west side of Phoenix called Lee Lee's. The restaurant inside serves great Viet food, pho included. The combination of spicy, savory, sweet, and citrus flavors is an experience.

Some years ago when Vietnam opened up to the west - We were able to go to Hanoi's old quarters and ate "Cha ca La Vong" - Named after the street it sits on -
The restaurant have been around since the turn of the century - Still owned by the family -
As we shared the family meal - Dad told me about him going there with my grandfather -
I tried to include the Google search link - But cannot for some reason -

This the one? Cha Cha La VongCool story. Indochina is on my list for Oriental travel, in addition to Singapore, HK, Japan, and the Philippines. Tibet would be nice. I could live without seeing the rest.

That's the one Lew -
On that very same trip - My dad and I traveled the course he took in 1954 during the changing of the guards from French to Vietminh -
Quite nostalgic for him and historic for me -
Our families still have my grandparent's home in the old quarters in Hanoi - Pho thuoc bac -
Things are changing so fast there - Go sooner than later - Parts of Thailand and Cambodia also Laos are quite nice - But it's a different type of travel -

I've developed an enthusiasm for Hue style pho. There's a place only a block away from home that me and my wife frequent regularly.
With an affection for both Vietnamese pho and many things Korean, perhaps I should consider a Regiment de Corée impression?
